1 lb potatoes
2-3 T olive oil
Red pepper - diced small
3 med zucchini - diced small
Fresh basil
Salt and pepper
Red pepper flakes
1 egg
4 ou smoked Provolone - diced small
3 ou parmesan
2 ou breadcrumbs

Directions:
Directions:
Preheat oven to 375
Grease a pan or ramekins and sprinkle with breadcrumbs. Cook the potatoes until just tender. Cool and then dice. Cook the red pepper in olive oil, adding zucchini, salt, peppers and basil. Cool and then mix all ingredients except breadcrumbs. Put in casserole and top with parmesan and breadcrumbs. Bake about 15-20 minutes.

Could use other vegetables like eggplant and capers. Could substitute mint and feta cheese.
