Ingredients:  
2 medium eggplants (male), chopped into 3/4 inch cubes.
2 cups onion, coarsely chopped
2 cups celery, chopped
1 large can of black olives (sliced)
1 tbsp capers
2 jars Barilla Tuscan Herb Tomato Sauce

Directions:
Directions:
Sauté onion, celery, and eggplant with olive oil in a large pot. Cook about 10 minutes. Add tomato sauce, capers, and black olives. Simmer for 45 minutes over low heat.

Serve chilled on crackers as an appetizer, or eaten over pasta.

Did you know eggplants had a sex?!? Male eggplants tend to have fewer seeds, and are therefore less bitter than female eggplants. To sex an eggplant, look at the indentation at bottom. If it's deep and shaped like a dash, it's a female. If it's shallow and round, it's a male.
