1¼ cups graham cracker crumbs
2 tablespoons sugar
½ cup melted butter
⅔ cup sugar
⅓ cup cornstarch
½ teaspoon salt
3 cups milk
4 slightly beaten egg yolks
2 tablespoons softened butter
1 tablespoon plus 1 teaspoon vanilla
4 egg whites
¼ teaspoon cream of tartar
8 tablespoons sugar
½ teaspoon vanilla

Directions:

Mix the graham cracker crumbs, sugar and melted butter, press firmly and evenly against bottom and side of pie pan.

Bake for 10 minutes at 350º, then cool.

For the filling, mix the sugar, cornstarch, salt, milk and eggs together in a sauce pan and cook until it comes to a boil and boil for one minute while continually stirring. Remove from stove and stir in butter and vanilla.

Let the filling cool and then put on the pie crust.

For the meringue, beat the egg whites, adding the cream of tartar, sugar and vanilla. Spread over the cooled filling and bake at 350º for about 15 minutes or until a delicate brown.
