3 cups fine dry bread crumbs, divided
2 cups (1 lb) cut/ground deli ham
1¾ cups grated Parmesan cheese
4 eggs, slightly beaten
1 small onion, finely chopped
¼ cup finely chopped fresh parsley
vegetable oil
Ken's Steak House Honey Mustard

Directions:
Directions:
Combine 1½ cups bread crumbs with next five ingredients, mixing well. Shape into 1 inch balls. Roll balls in remaining 1½ cups bread crumbs.
Chill 30 minutes.
Deep fry ham and cheese balls in hot oil (375º) for 2-3 minutes or until golden brown.
Drain on paper towels.
Serve immediately with honey mustard.
