1 tbsp butter
1 large clove garlic (minced)
1 medium carrot (diced)
1 medium onion (chopped)
4 cups chicken stock
3 cups pealed and diced ripe tomatoes
3 tbsp chopped fresh basil leaves
salt and pepper to taste

Directions:
This light, flavourful soup is perfect for a first course during tomato season. If fresh basil is not available use fresh dill. If dill is used you will want to add more dill than the basil called for in the recipe.

In a heavy saucepan, melt butter; stir in garlic, carrot, and onion.

Cook over medium-low until onion is tender.

Add stock; cover and simmer for 20 minutes.

Stir in tomatoes and simmer for 10 minutes.

Just before serving stir in basil salt and pepper to taste.

Makes 6 servings (about 1 cup each)
