1 cup light mayonnaise (Helmans)
16 small potatoes, cooked and peeled
1 clove garlic (minced)
½ tsp salt
½ tsp oregano
8 cherry tomatoes (cut in half)
pinch of pepper
pinch hot pepper flakes
1 small green pepper (diced)
1 small green onion (diced)
4 oz feta cheese, chopped
sliced black olives for garnish
sliced cucumber for garnish
In a bowl combine mayonnaise, garlic, oregano, salt, pepper and hot pepper flakes.
In a separate large bowl dice cold potatoes (about 3 cups). Mix in tomatoes, green peppers, onions and feta cheese.
Add dressing and toss gently to coat.
Garnish with cucumber and olives.
Makes about 6 servings (I usually double this recipe).
Best made the night before and refrigerate.
