3 Tbsp. salad oil
1 small clove of garlic
1 Cup chopped onion
1/2 Cup chopped green pepper
1 Quart canned tomatoes (crushed)
1 medium bay leaf
Green celery leaves from 4 stalks
1/2 tsp. salt
pepper to taste
1 tsp. sugar

Directions:
Directions:
Heat oil in a 3 quart saucepan. Add the next 4 ingredients and sauté until onion is golden and translucent stirring often. Add the next 5 ingredients and, cover and cook slowly, stirring occasionally until sauce thickens, about 40-45 minutes. Stir in sugar if desired. This sauce is excellent on spaghetti, ravioli, or an omelette.
