6-8 potatoes, peeled and diced
1 (5 ounce) can evaporated milk
1 lb Velveeta cheese
1 can cream of chicken soup
1 stick butter
1 can cream of onion soup (sometimes hard to find, Kroger carries it)

Directions:
Directions:
Cover potatoes in stockpot with water and boil until tender. Don't pour off excess water. Add all other ingredients. Simmer for 30-40 minutes stirring often. Serve hot.
Optional: top with real bacon bits, shredded cheese, and chopped green onions.
