2 lb hamburger and ½ - 1 package Onion soup mix
1-10 ounce can favorite enchilada sauce (We enjoy Old El Paso)
2 packages shredded Cheddar cheese
1 package large soft flour tortillas
Lettuce, shredded
Tomatoes, chopped
Sour cream

Directions:
Directions:
Brown and drain hamburger. Add onion soup and mix well. On flour tortillas; place 2 TBSP hamburger and 1 TBSP sauce. Sprinkle on some cheese. Roll tortillas and lay rolled side down. Spread remaining sauce on enchiladas. Sprinkle more cheese over top.
**To save time, I omit rolling tortillas and layer tortillas first, then follow up with hamburger mixture, drizzle ½ can sauce, sprinkle cheese and then another layer of tortillas. Then I finish up with remainder of sauce being sure to cover edges of tortillas. Bake at 350 degrees about 25-30 minutes. Top with lettuce, tomatoes and sour cream, if desired.
