1 lb lean hamburger ¼ cup flour
1 cup onion, chopped 2 cups milk
½ shredded Sharp Cheddar cheese 1-7 ounce can green chiles (mild), chopped
1 package tortillas (flour or corn…as desired) ½ lb medium Cheddar, grated
¼ cup butter 1 pkg powdered Taco seasoning
½ tsp salt ¼ tsp pepper

Directions:
Brown hamburger and onions. Take off stove and add sharp cheese. Set aside. In skillet, put in oil and brown the tortillas…about 5 seconds per side. Roll meat mixture in tortillas as the tortillas get done. Place them in a 9” x 13” baking pan.
Sauce: In saucepan, melt butter; add flour and salt & pepper. Add milk and stir until mixture thickens (this is the basic recipe for a medium thickness white sauce). Add cheese to this mixture until it melts…then add the chiles and stir. Pour over the enchiladas and bake at 350 degrees for 20-30 minutes, till hot and bubbly!

! This is my all-time favorite enchilada recipe! It goes great with a Frito Salad (recipe is in this book) and some nice spanish rice.
