1 rotisserie chicken, shredded
2 packages Uncle Ben's wild rice, cooked according to package instructions
½ onion, diced
4 tablespoons butter
1 can French Style green beans, drained
1 can water chestnuts, drained and diced
2 cans cream of mushroom soup
1 can sliced mushrooms
1 cup milk
2 cups shredded Cheddar cheese

Directions:
Directions:
Saute onion in melted butter until tender. Stir all ingredients together and pour into a large casserole dish or separate into 2 smaller ones. Top with cheese. Bake at 350º for 30 minutes.

This casserole can be altered to fit personal tastes - you can leave out the onion, water chestnuts or mushrooms if desired. Cream of chicken soup or cream of celery soup can be subbed for the cream of mushroom; often I just use one can of soup and add a cup of sour cream. This is really designed to make 2 smaller casseroles and freeze one; also it is what I usually take to someone who has been sick or had a family tragedy and is in need of a meal!
