6 chicken tenders 1 cup Italian bread crumbs
1/3 cup shredded parmesan cheese
2 cups shredded Italian cheese blend
1 cup flour 1 can tomato sauce
2 Eggs Olive oil
Salt & Pepper

Directions:
Directions:
For the breading, mix the flour with salt and pepper to taste. In another bowl, whisk the eggs. In another bowl, mix the breadcrumbs and parmesan cheese. Coat the chicken in the flour, then eggwash, then bread crumb mixture. Fry the chicken in a pan with about a half inch of olive oil at medium-medium high heat until the breading is browned on both side. While they are frying, coat the bottom of a baking dish with a little bit of tomato sauce, olive oil, and Italian seasoning. Once they are brown, lay them in the baking dish and cover them in the rest of the tomato sauce. Sprinkle a little Italian seasoning over them and cover with the cheese blend. Sprinkle a little more Italian seasoning and then drizzle the whole pan with olive oil. Bake @ 350 for about 15 minutes, until cheese is fully melted and just starting to brown in some spots.

To make sandwiches, serve on Homemade Italian Bread (see recipe).
