12 oz refrigerated buttermilk flaky biscuits
olive oil
1 garlic clove, pressed
½ c tomato, seeded and chopped
¼ c green bell pepper, chopped
¼ c onion, chopped
¼ tsp dried oregano leaves
¼ tsp dried basil leaves
1 oz (¼ c) fresh parmesan cheese, grated

Preheat oven to 400º. Separate biscuits horizontally in half to form 20 biscuits. On round 13" baking pan arrange 6 biscuits, with edges touching, in another circle around around center ring of biscuits. Gently press biscuits together with fingers to seal, leaving outside edges scalloped for petal effect. Lightly spray biscuits with oil. Using a garlic press, press garlic over biscuits; spread evenly. Apply chopped tomato, pepper, onion; sprinkle evenly over biscuits along with oregano and basil. Bake 15-17 minutes or until edges are golden brown, remove from oven. Immediately grate cheese over warm biscuits. To serve, pull biscuits apart..

Many may wonder why I placed recipes of Lisa in this book, well let me tell you why.... Lisa never knew her father and was taken away from her mother who suffered from mental illness when she was 10 years old. At that time she was placed in the foster care system until she aged out. She met me,Tracey, at Steak N Shake when we were 19 years old and we have been sisters ever since. In reality, Lisa has been more of a sister to me than my own sister. She's been there for the births of my two girls, through the loss of my daughter Emily, the marriage to my husband Kevin, and through the celebration of getting my nursing degree. Now she is getting her own nursing degree. Go Lisa!
So to make a long story short, Lisa is a honorary Stuckey and I couldn't be more proud of my beautiful friend.
