1 cup sugar
2 tablespoons flour
3 tablespoons cornstarch
1/4 teaspoon salt
1 and 1/2 cups water
2 lemons, juiced and zested
2 tablespoons butter
4 egg yolks, beaten
9-inch pie crust, baked
4 egg whites
6 tablespoons sugar
Directions:

Preheat oven to 350 degrees.
Bake pie shell until light brown.
In medium pot, whisk together sugar, flour, cornstarch and salt.
Stir in water, lemon juice and zest.
Bring to a boil and stir in butter.
Place egg yolks in a small bowl and whisk in gradually 1/2 cup of hot mixture.
Whisk egg yolk mixture back into hot mixture in pot.
Bring to a boil and cook until thick, stirring occasionally.
Remove from heat and pour filling into baked pastry shell.
To make meringue: In large bowl, whip egg whites until foamy.
Add sugar gradually and whip until stiff peaks form
Spread meringue over pie, sealing edges at crust.
Bake for 10 minutes until meringue is golden brown.
