1 1/4 cups all purpose flour
1 tsp baking powder
1/4 tsp salt
2 very ripe bananas mashed (3/4 cup)
1 stick (1/2 cup) unsalted butter, melted
2/3 cups sugar
1/2 tsp vanilla
3/4 cup sweetened flaked coconut

Directions:
Directions:
Preheat oven to 375 degrees.
Line muffin tins with cupcake cups.
Whisk together the flour, baking powder and salt in a bowl.
Whisk together the mashed banana, butter, sugar, egg, vanilla and 1/2 cup coconut in a large bowl, until well combined.
Fold in the flour mixture, until flour is just moistened.
Divide batter among the muffin cups.
Sprinkle tops with remaining 1/4 cup coconut
Bake muffins about 25 minutes, done when puffed and golden brown.
Transfer to a rack and cool slightly.
