1 lg head Cauliflower
2 T. Butter
2/3 c. Sour Cream
1/4 c. Heavy Cream
2 cloves Garlic, minced
1 1/2 c. Cheddar cheese,Shredded, divided
6 T. Bacon bits, cooked, divided
1/4 c. Green onion, chopped, divided
Salt & Pepper

Directions:
Directions:
Preheat oven to 450°. In large bowl, toss cauliflower with butter, salt and pepper. Place in casserole dish.
Roast cauliflower in single layer in oven for 15-20 minutes. Whisk together sour cream and heavy cream until smooth. Stir in the garlic, half the cheese, half the bacon, and half the green onion. Mix sauce with roasted cauliflower. Top with remaining cheese and bacon. Bake for another 5-10 minutes. Top with remaining green onions.
