1 lb ground turkey (cooked)
1 cup quinoa (rinsed)
1 cup water
2 (15 oz) cans black beans, rinsed and drained
2(10oz) cans Old El Paso mild red enchilada sauce
1 can diced tomatoes and chiles
1 cup frozen corn
cup red bell pepper, diced
cup onion, diced
1 clove garlic, minced
Juice of 1 small lime
1 tsp ground cumin
1 TB chili powder
Salt and pepper
