4 lbs boneless pork roast
2 lbs sauerkraut
1 c. chopped yellow onion
1 peeled,chopped gala or sweet apple
1/2 c brown sugar
1 tsp salt & pepper
1 c. water or liquid from sauerkraut
2 TBSP vegetable oil.

Directions:
Directions:
Preheat oven to 325. Pat roast dry. Sprinkle with salt and pepper. Sear roast in hot vegetable oil approximately 5-8 min on each side on the stove top. Put sauerkraut, onion , apple, brown sugar, water or drained liquid in a dutch oven with a tight fitting lid. Nestle the seared roast on top of the mixture in the dutch oven. Cover, and place in preheated oven . Cook approximately 2 hours or until meat thermometer reads 150 degrees. Remove from oven. Cover loosely with foil and let rest 15 minutes.
