2 lbs ground elk ½ tsp cumin seed
1 medium onion, chopped 1 tsp soy sauce
1 tsp salt 2 medium bay leaves
1/3 tsp pepper 1-16 ounce can tomato sauce,
1 TBSP Chili Powder 1–28 ounce can whole tomatoes, undrained
4-15 ounce cans Kidney or Pinto beans, undrained

Directions:

Brown ground elk and onion; drain off excess fat. Add seasonings, tomato sauce and tomatoes that have been cut into pieces. Simmer for 3 hours, stirring occasionally. Add beans and cook for 45 minutes longer.

Really, it’s only chili, but probably the best recipe I’ve ever used. It’s perfect for the hunter’s wife; try using ground dear or bear, but of course, you can always use beef.
