For the crust:
1 cup flour
1/2 cup butter, softened
1/4 cup powdered sugar
1/4 cup vanilla
1/4 teaspoon salt

For the lemon layer:
2 large eggs
1 large egg yolk
1 cup sugar
2 tablespoons flour
1/4 cup lemon juice
1 tablespoon grated lemon zest
1 teaspoon powdered sugar or to taste



Directions:
Directions:
Preheat oven to 350 degrees and lightly oil 8x8 inch baking dish.
In bowl, mash flour with butter.
Mix in sugar, vanilla and salt until crumbly.
Press dough into pan and prick holes all over.
Bake for about 22 minutes until edges are barely golden brown.
Beat eggs and yolk together, whisk in sugar, flour, lemon juice and zest.
Pour lemon mixture over crust.
Bake until custard is set, about 25 minutes.
Cool before cutting into 16 squares.
Dust with 1 teaspoon powdered sugar.
