For the dough:
1lb. 1oz all purpose flour
1/2 lb. sweet butter
3 1/2 oz. sugar
1 egg
a pinch of salt
1/8 cup ice cold water

For the filling:
Fruit of your choice like mango, banana, strawberries......
2 teaspoons ground cinnamon
1 tablespoon pure vanilla extract
1/4 cup granulated sugar
1/2 cup butter cut into small pieces

For the dough:
In a large bowl put the flour, sugar and salt. Mix well.
Bring the butter to room temperature and cut into small pieces.
Add the butter, egg and water to the flour and mix until well incorporated.
Place dough on a floured surface and knead for 5 minutes until smooth.
Refrigerate dough for 30 minutes.
Cut dough in half and roll on a floured surface into a 12" round.
Put the dough in two 9" round pie dishes.
Using a fork make holes on the bottom of the pie dough, this will allow the dough to cook properly on the bottom.


For the filling:
For 2 pies you will need about 3-4 lbs. of fresh fruit of your choice.
Cut the fruit into large chunks and put in a bowl.
Add the cinnamon, vanilla and sugar to the fruit and mix well. Rest for 30 minutes.
Fill the pie with fruit to the edge of the pie dish.
Bake in a 350F oven for 35 minutes and the edges of the pie are golden brown
