4 lbs. Ground Beef
1/4 c. Curing Salt
1 T. Liquid Smoke
2 t. Garlic powder
1 T. Pepper corns (whole)

Directions:
Directions:
Mix ground beef and curing salt together. Put into a covered bowl and store in refrigerator overnight. Add remaining ingredients. Mix well. Shape into logs. Place rack on cookie sheet to catch grease. Bake on a rack at 225 for 4 hours.

Helpful note: The greasier the hamburger the better the salami. Even though it does not appear to be a lot of pepper corns, the flavor intensifies as it cooks.
