2- 6 oz filet mignon
⅛ tsp. salt
⅛ tsp ground black pepper
2 Tbsp butter
1 tsp dijon-style mustard
2 Tbsp chopped green onion (can use Vidalias)
1 Tbsp butter
1 Tbsp lemon juice
1½ tsp worcestershire
1 Tbsp fresh chives, minces
1 tsp brandy (or a bit more!)
1 Tbsp fresh parsley, minced

Season both sides of steaks with salt and pepper. Melt 2 Tbsp butter in a heavy skillet (cast iron is best). Add mustard and onion. Saute over medium heat 1-2 minutes. Add steaks and cook until medium rare or medium; at least 3-5 minutes per side or longer if needed. Remove steaks to serving plate and keep warm, leaving drippings in the pan. Add 1 Tbsp butter, lemon juice, worcestershire, and chives to pan drippings. Cook for 2 minutes on medium heat. Add brandy and stir, then pour over steaks. Sprinkle parsley over top.
