3/4 cup old fashion or quick rolled oats
1/2 cup of all purpose flour or whole wheat flour
1 cup of non-dairy milk
1 tbsp of citrus fruit juice such as lemon, lie, orange, or grapefruit
2 tsp citrus zest
1 tbsp chia seeds
3 tbsp water
1 tsp baking powder
1/2 tsp baking soda (or additional 1tsp baking powder)
1 1/2 tbsp oil (canola, coconut, vegetable)
1 - 3 tbsp honey or other sweetener per your taste (maple syrup, agave, etc.)
fresh or frozen berries to taste
additional toppings such as maple syrup, cinnamon, fruit, citrus juice, coconut oil, etc.

1) mix chia seeds and water and let set to gel
2) mix milk with citrus juice and zest and let curdle
3) pulse 1/2 cup of oats in food processor until flour like consistency
4) in large bowl mix flour, oat flour, remaining 1/4 cup of oats, baking soda, and baking powder and mix to combine
5) add in milk, chia seeds, honey, and oil and mix until smooth
6) fold in berries
7) the recipe may be allowed to set over night (this is what i prefer) or used immediately to make delicious pancakes, they should bubble like normal cakes and need to cook for about 3 - 5 minutes per side depending on your stove top

It took a lot of tweaking to get this recipe how I wanted it. I still tweak it almost every time I make it because I'm often short on at least one ingredient. It can also be adjusted to a different flavor profile such as peanut butter banana (omit citrus zest, add PB, replace chia seeds with 1 Banana) or Apple and cinnamon (no zest or citrus juice, add apple cider vinegar apples and cinnamon/nutmeg/allspice/clove). I find it to be very easy and prefer to make it the night before I want to eat it for a quick breakfast. It makes about 4 five inch pancakes so it's nice for 2 people or two mornings.
