1 lb. ground beef
1 (17 oz.) can creamed corn
lg. onion, chopped
1 slightly beaten egg
Salt & Pepper to taste
1 ( 7 oz.) can chopped green chilies
1 (6 oz.) pkg. cornbread mix ( do not use muffin mix)
8 oz. grated cheddar cheese

Directions:

Brown and drain meat and onion, season with salt and pepper.
In bowl, combine cornbread mix with corn and egg(no milk). Spread half batter in a shallow baking dish, it will be thin. Spoon in ground meat, evenly: top with green chilies and cheese. Add remaining cornbread batter.
Bake, uncovered, at 350 for 40-45 minutes, until golden brown and sizzling.(Meat flavor can vary, to include Mexican dish.) I cook my casserole in my cast iron skillet.
