1 cup rice
1 cup water
1 cup milk
½ stick (4tbs.) butter

4 large eggs, separated
1 Tbs. flour
1 tsp. Baking powder
1 cup sugar
1 Tbs, grated lemon peel
1 tsp. Vanilla
Raisins, to taste.

Directions:
Directions:
Cook rice in water, milk and butter until done. Cool.

Beat egg whites till stiff, put aside.

Combine egg yolks and sugar; beat till creamy and light; add flour and baking powder, which has been sifted together. Mix well, then add lemon peel, vanilla and some raisins. Add the cooked and cooled rice, then fold mixture into the beaten egg whites. Bake in a greased and floured baking pan at 350º for 30 to 35 min.
