3/4 c. flour
Salt and freshly ground pepper
6 tbsp. butter
3/4 c. ham or bacon, chopped
2 eggs, beaten
1/2 c. cream
3/4 c. cheddar cheese, grated

Directions:
Directions:
Preheat oven to 425 F.

Sift together the flour and salt into a bowl. Rub in the butter until the mixture resembles fine breadcrumbs. Add enough water to knead into a firm dough.

Roll out the pastry on a lightly floured work surface and use to line an 8 pie plate.

Scatter the meat over the pastry. Beat the eggs, fresh cream, seasoning and grated cheese together. Pour the mixture over the bacon.

Bake for 7-10 minutes. Reduce to 375 F for an additional 20-30 minutes, until golden brown.

Serve hot or cold.
