8 large eggs, separated
1 cup sugar
1 cup crushed Crackers
1 cup chopped walnuts
½ tsp. Baking powder
¾ tsp. Cream of tartar

Directions:
Directions:
Beat egg yolk with sugar until light. Fold in cracker crumbs, nuts and baking powder.

Beat egg whites till stiff and fold into the yolk mixture.

Line a jelly roll pan (15½x10½x1”) with wax or parchment paper. Bake in 400º oven for 25 minutes.

Cut cake in half to double up and fill with raspberry, currant
or apricot jam. Sprinkle top with powdered sugar and serve each piece with a dollop fo whipped cream.
