1 beaten egg
1 c. milk
1 c. coarsely crushed saltine crackers (22 crackers)
1 17 oz. can cream style corn
1/4 c. finely chopped onion
3 tbsp. chopped pimiento
1 tbsp. butter or margarine, melted
salt and pepper

Directions:
Directions:
Preheat oven to 350º F.

Combine egg, milk, 2/3 cup cracker crumbs, 1/4 tsp salt, and dash of pepper. Stir in corn, onion, pimiento; mix well. Turn into a 1 quart casserole.
Toss butter with remaining crumbs; sprinkle on top of corn mixture.

Bake, uncovered for 1 hour or until a knife inserted near center comes out clean.
