Pastry for 9 inch double crust pie.
1/2 cup butter
3 tablespoons flour
1/4 cup apple juice
1/2 cup sugar
1/2 cup brown sugar
2 teaspoons cinnamon
1/4 teaspoon nutmeg
1 teaspoon vanilla
5-6 Granny Smith apples, sliced

Directions:
Directions:
Preheat oven to 425 degrees.
Melt butter and stir in flour to form a paste.
Add juice, spices and sugars, bring to a boil and simmer until thick.
Place bottom crust in pan, brush with egg white and bake about 5 minutes until light brown.
Mix apples with sauce, then pour into crust.
Form lattice crust on top.
Brush with egg white and sprinkle with sugar.
Bake 15 minutes at 425 degrees, then reduce temperature to 350 degrees.
Continue baking for 35-45 minutes until apples are soft.
