Preheat oven to 350 degrees.
In a large bowl, crumble the kataifi & mix with melted butter.
Pour half of the mixture in non-stick pan & spread out.
Combine sugar, ricotta cheese & mozzarella cheese.
Slightly heat the milk 1 minute, add semolina & cook for 30 seconds.
Add semolina mix to cheese mixture & combine well.
Pour cheese mixture over kataifi crust in pan & spread evenly.
Spread the rest of the kataifi mixture over cheese mixture.
Bake for 45 minutes until golden brown.
Cool for 30 minutes, then invert to serving plate.
Garnish with ground pistachios & serve warm with simple syrup.
Make simple syrup by combining sugar, water and lemon juice in pot & simmer 10 minutes.
Add rose water & orange blossom water, then cool.
