4 eggs, beaten
1 1/3 cup sugar
1 TBS salt
1 1/3 cup melted shortening
12-15 cups flour
4 cups water (preferably potato water)
2 TBS yeast
2 cups mashed potatoes

1. Stir yeast into water and set aside
2. Beat eggs, sugar, and salt
3. Stir 4 cups of flour into dissolved yeast water
4. Add melted shortening, and beat in well
5. add in egg mixture and mashed potatoes
6. Continue adding flour until soft dough
7. Refrigerate overnight or up to 2 days
8. Shape into rolls and let rise about 1-2 hours
9. Bake at 400 degrees for 10-15 minutes.
