Fruity Quinoa Salad with Almonds Recipe

Salad:
4 oz. uncooked quinoa
1 1/4 cup pineapple juice
1 box of strawberries (sliced)
1 or 2 kiwi
15 oz. canned or fresh cubed pineapple
2 oz raw, slivered almonds
1 box blueberries

Dressing:
2 Tbsp maple syrup
1/2 cup orange juice
1 tsp apple cider vinegar
1/2 tsp dijon mustard

In a small pot, add quinoa and pineapple juice. Bring to a boil, then turn burner low and simmer for 12-15 minutes. Scrape into a bowl, and place in the freezer to cool.

Clean and cut your fruit

Place almonds on a sprayed baking sheet, and roast in the oven for 350 for about 5 minutes (or until they start to toast)

In a mixing bowl combine maple syrup orange juice, apple cider vinegar, and dijon mustard - mix by hand.

In a large mixing bowl combine cooled quinoa, fruit (EXCEPT BLUEBERRIES), almonds, and dressing. Mix by hand.

Add blueberries to each bowl just before serving.

Can add whatever fruit you'd like - Raspberries work but should be added before serving so they don't mush. Peaches work well, bananas do not.
