- 1 8oz. can crushed pineapple
- 3 eggs
- 1/2 cup vegetable oil

- 2 1/4 cups flour
- 1/2 tsp. baking powder
- 1 1/2 tsp baking soda
- 1 tsp cinnamon
- 3/4 tsp salt
- 2/3 cup sugar

- 1 1/2 cup shredded carrots
- 1/2 cup shredded coconut
- 1/2 cup walnuts (optional)
- 1/2 cup raisins (optional)

Preheat oven to 350.

Mix the dry ingredients together, and in a separate bowl mix the wet ingredients together. Stir the wet into the dry until just combined. Add carrots, raisins, coconut, and walnuts, stir in. Bake for approx. 20 minutes, or until the toothpick comes out clean.
