2 lbs dry pinto beans (Soak beans over night)
1 lb lean hamburger
1 lb Mild Italian sausage (can use spicy if you like)
I package of “Six Gun Chili Mix" (only use 1/2 of the enclosed red pepper unless you like it hotter!)
Add extra 3 tablespoons of chili powder (in addition to the above Six Gun mix)
3 Tablespoons of ground Cumin.
Four tablespoons of seasoned salt similar to Lowry’s, Johnnie’s, etc. or season to taste.
4 garlic cloves, chopped
1 can tomato sauce (8 oz.)
1/2 packet of instant mashed potatoes

Directions:

Add beans to a 6 qt. pot with lid and enough water to cover beans by at least 3-4 inches. Turn on to low heat.
Fry meat in a skillet and drain off most all the grease. Discard grease.
Add meat and all the above ingredients EXCEPT instant mashed potato packet to already hot beans and stir well.
Continue to cook on low for about two hours at which time you need to add the mashed potato mix and stir well.
Cook on low/simmer for an additional two hours stirring often and adding water as needed.

I prefer my chili beans to be a little on the “Runny Side” so it’s important to check the water level often and stir often and don’t let the beans stick to the bottom of the pot.

Chili beans will be even better the next day !!

Note: The instant mashed potatoes is used to thicken the broth and add body to the overall mix. I think it is quite necessary to do this. Can use masa instead if you like.

A Slow Cooker would work great for this if ya have a large enough one. If not cut the recipe in half or just use a 6 qt. sauce pan with lid like I do.

Generally there isn't a fart in a bowlful of this and sometimes I surprise myself!
