1 ½ c Brown sugar
2/3 c Oil or melted butter
1 Egg
1 tsp. Vanilla
1 c Buttermilk (or 1 C milk + 1 T lemon juice-let stand 5 min)
2 ½ c Flour
1 tsp Salt
1 tsp Baking soda
1 ½ C Rhubarb

Topping:
1 ½ C brown sugar
1 T butter
(Double topping mixture if desired)

Directions:
Directions:
Beat together brown sugar, oil/butter, egg, vanilla and milk. Mix in flour, salt, baking soda, and rhubarb. Pour into greased loaf pan.

Combine topping mix and sprinkle on top of batter.

Bake 325for 1 hour.
