¾ c. chopped onion
½ c. chopped celery
¼ c. chopped green pepper
2 cloves garlic, minced
2 T. butter
2 c. fully cooked chopped ham
1 can (28 oz.) diced tomatoes, not drained
1 can (10½ oz.) beef broth
1 c. uncooked long grain rice
1 c. water
1 tsp. sugar
1 tsp. dried thyme
½ tsp. chili powder
¼ tsp. pepper
1½ lbs. fresh or refrigerated uncooked shrimp
1 T. chopped parsley

Directions:
Directions:
Sauté onion,celery, green pepper and garlic in butter till tender. Add next 9 ingredients and bring to a boil. Reduce heat, cover and simmer until rice is tender, about 25 minutes. Add shrimp and parsley, simmer uncovered till shrimp are tender, 7-10 minutes.
