5 lbs. ground beef (ground deer does well also)
3 tsp. garlic salt
4 tsp. mustard seed
3½ tsp. coarse ground black pepper
6 tsp. hickory smoke salt
2 T. Accent
2 tsp. liquid smoke
½ tsp. cayenne pepper
½ tsp. red pepper
5 tsp. Morton TenderQuick salt

Mix all ingredients together in a bowl. Cover and keep refrigerated. If you use ground deer meat , it will be black by the second day. Stir every day for 5 days. Mixture will be stiff. Keep covered and refrigerate. Cook on the 5th day. Roll meat out in small rolls about 6 inches long and about 2 inches around. Cook on cake racks. Meat has to be elevated. Put something under the meat to catch the drippings. Cook for 8 hours at 150º turning every 2 hours, ¼ turn.
