1 cup sour cream
2 eggs
1 can creamed corn
1 can whole kernel corn, drained
1 8 oz box Jiffy corn muffin mix or similar
1 stick of margarine or butter

Directions:
Directions:
Preheat oven to 375º. Melt margarine in deep baking casserole in preheating oven (or microwave), using melted margarine to coat sides of dish. Stir in remaining ingredients, mixing well. Bake at 375º for 35-45 minutes, or until knife comes clean when inserted.

The update: Make recipe as above, except add 1/2-3/4 cup shredded mozzarella cheese and a handful of parmesan. Bake in mini muffin cups (ideally silicone), and they make a perfect party appetizer.
