16 oz extra sharp cheddar cheese, grated by hand
1 stick butter, melted
1 tsp salt
Generous 1/4 tsp red pepper
2 c pre-sifted flour

Directions:
Directions:
Preheat oven to 325°F. Line cookie sheet with parchment. Grate cheese. Melt butter. Stir cheese into melted butter in large mixing bowl. Add salt and red pepper to sifted flour. Add flour slowly to butter/grated cheese mixture. Use a spoon to stir until mixture is so thick that you must use your hands. Pinch off mixture in large amounts you can hold in your hands, and squeeze each amount 100 times to soften! Then form into small logs that will fit into a cookie press. Use the “star” disc. Squeeze into lines onto the cookie sheet. Refrigerate for 15 minutes before placing in oven (the straws are less likely to “melt” while baking). Bake for 15 minutes. Watch carefully and test with finger when they begin to turn golden brown. Ready when firm but not over-browned. Remove to rack to cool. When cool, break the straw lines into desired lengths. Freeze extras in tight containers until needed.
