2 T Olive Oil
4 Skin-on bonelesschicken breasts (about 1 1/2 lbs)
Kosher Salt
3 Heads Garlic
4 Sprigs fresh rosemary
4 Slices Sourdough bread
2 T White wine vinegar

Directions:
Directions:
1. Preheat the oven to 425. Heat the olive oilin a large ovengroof skillet ove3r medium-high heat. Season the chicken with salt and pepper ad cook skin-side down until browned, about 5 minutes.
2. Separate tyhe heads of garlic into cloves but do not peel. Flip the chicken, add the garlic cloves and rosemary to the siullet and transfer to the oven. Roast until the chicken is cooked through 15 to k20 minutes more.
3. Place the bread on a platter and top each slice with a chicken breast . Add the vinegar to the skillet and scrape up any browned bits with a wooden spoon. Add 3 T water and simmer until the sauce thickens slightly, about 2 minutes. Pour the sauce and garlic over the chicken and serve.

I made this for Jan and I - June 22, 2018. It was excellent - we both said it is a "do again". We did bone in, skin-on chicken breasts and said chicken without bones would be better. We left out the sourdough bread - we thought it was really good without it - but it is an option. I forgot to add the vinegar. I would take the roasted garlic out of the skillet when it was finished THEN add perhaps balsamic vinegar and/or white wine or chicken broth. It was great the way we made it.
