1 doz. peaches, peeled, halved, pitted and chopped
7 jalapenos, chopped without seeds
5-6 c. sugar
1¾ pkg. powdered pectin
3-4 pt. jars, sterilized

Directions:
Directions:
Prepare peaches and place in heavy saucepan. Do not add water. Cook over low heat until tender but not mushy. Add jalapenos and cook until tender. Add sugar and cook until thickened. Add pectin and cook an additional 15 minutes, stirring frequently. Spoon into hot sterilized jars, leaving ½ inch headspace. Wipe rims; secure with lids and rings. Process in boiling water bath for 20 minutes; set jars on a towel to cool. Check for seals. Makes 3-4 pint jars. To use as appetizer, serve over cream cheese with crackers. This is also good over chicken or turkey.
