Chicken Stroganoff Recipe

2 chicken breasts (16 ounces)
1-2 tablespoons of olive oil
1 medium onion (chopped)
4 garlic cloves
1 cup of corn
2 jars of Dutch mushrooms (cut)
4 cans of table cream
Ketchup to taste
Salt and pepper to taste

Directions:
Directions:
1. Season the chicken (I like garlic mixes that include salt, Montreal/Tone's are both good). Bake at 300ºF for 1 hour. If you choose to use a pressure cooker, use 1 ½ cups of chicken broth, seasoning and cook at high pressure for 8 minutes, then allow to naturally release.
2. Shred the cooked chicken and save the juice from cooking it.
3. Sauté the onions over medium heat until translucent, add the garlic and continue cooking until fragrant.
4. Add cooked corn, chicken, Dutch mushrooms and table cream and stir together.
5. Season with salt, pepper, and ketchup to taste.

Serve over rice.

Optional: Sprinkle with crushed potato chips or sticks.
