3 large tomatoes (2 lbs.) sliced 1/4 " thick
3/4 tsp. Kosher salt
1 Cup finely chopped onion
1/2 tsp. Butter
1 1/2 Cup grated cheese ( use cheddar, Monterey Jack, Parmesan,Guyere or any combination you like)
1/2 Cup Mayonnaise
1/4 Cup Herbs ( basil, oregano,parsley or thyme)
1 tsp. Hot sauce
1/2 tsp. Pepper
1 crust (I use frozen prepared crust)

Line a rimmed cookie sheet with several layers of paper towels. Arrange tomato slices on sheet, sprinkle with 1/4 tsp. Salt and cover with more paper towels. Let drain at least 30 minutes.

Bake pie shell according to directions.

Heat large skillet over medium heat. Add onion, butter and 1/4 tsp. Salt. Cook until soft (5 to 8 minutes)

Combine cheese, mayonnaise, herbs, hot sauce, pepper,onion and 1/4 tsp. Salt.

Blot tomatoes with fresh paper towels to remove as much moisture as possible.

Arrange tomato slices in pie shell and top with filling.

Bake at 350 degrees for 40 to 45 minutes rotating halfway through.

Cool to room temperature before serving.
