4 Cornish hens
8 oz. pkg. stuffing mix
1 c. chicken stock
1-2 lg. orange, cut up (to make orange juice)
¼ c. fresh orange juice
2 T. honey
1½ tsp. vegetable oil
1 T. lemon juice
¼ tsp. grated orange peel

Directions:
Directions:
Rinse hens. Sprinkle inside and out with salt and pepper. Prepare stuffing mix according to pkg. directions. Spoon stuffing into hens and truss. Arrange hens on a rack in a crockpot. If crockpot is small, place hens in pot with neck ends down. Combine remaining ingredients. Baste hens with some of the sauce and pour remainder in pot. Cover and cook on low for 5-7 hours. Baste hens once or twice during cooking. Spoon sauce over hens at serving time.
