Spinach Avocado Pasta Salad Recipe

12 oz rotini pasta
4 C baby spinach
3 avocados
1 garlic clove
C lemon juice
1 tsp salt
tsp pepper
1 can sweet corn, drained
2 C halved cherry tomatoes

Cook pasta, drain and set aside to cool
Drain corn and add to cooked pasta
In food processor blend half the spinach, 2 avocados, garlic, lemon juice, salt and pepper until smooth. Add remaining spinach and blend until smooth.
Pour over cooled pasta and mix well. Add tomatoes, remaining avocado (diced) and salt if necessary.
Serve chilled.
