1 lb. large (21-25 count) cleaned and deveined shrimp
¼ c. butter, room temperature
¼ c. extra virgin olive oil
3 T. minced garlic
2 T. minced fresh parsley
⅛ tsp. red pepper flakes (optional)
2 T. freshly squeezed lemon juice
salt and pepper to taste

Directions:
Directions:
Heat olive oil in a large skillet. Add garlic and saute just until fragrant. Add shrimp and cook for 1 minute. Add softened butter, turn the shrimp and cook for 2 minutes until butter is melted and shrimp are cooked through. Stir in red pepper flakes, lemon juice and parsley.

Serve over rice or pasta or just eat 'em like they are, fresh out of the skillet.

This is one of daughter Cindy's favorite dishes. I wasn't going to put it in this book because it's so simple but she insisted! So here you have it -- plain old garlicky, buttery shrimp.
