2 and 1/2 pounds Brussel sprouts, trimmed and halved
4 slices bacon, chopped
1 tablespoon olive oil
1 large onion, diced
4 sprigs thyme or savory
1 teaspoon salt
black pepper to taste
2 teaspoons lemon juice (optional)

Directions:
Directions:
Bring a large pot of water to boil and blanch Brussel sprouts for 3-5 minutes, then drain.
Cook bacon until brown, transfer to drain on paper towel, saving drippings.
Add oil to pan and cook onion.
Stir in thyme, salt and pepper.
Add Brussel sprouts and cook until tender.
Add bacon and lemon juice and toss to mix.
