8 ounces dried flat rice noodles
3 tablespoons fish sauce
1/4 cup lime juice
1 tablespoon sugar
2 tablespoons oyster sauce
1 and 1/2 tablespoons Asian chile pepper sauce
1/4 cup chicken stock
1/4 cup oil
1 tablespoon chopped garlic
8 ounces shrimp
8 ounces chicken, cubed (or use roasted chicken)
2 eggs, beaten
3 cups bean sprouts
6 green onions, chopped
2 tablespoons roasted peanuts, chopped
1/4 cup chopped cilantro
1 lime, cut into wedges

Directions:
Directions:
Soak noodles in hot tap water for 20 minutes.
In small bowl, stir together fish sauce, lime juice, sugar, oyster sauce, 2 teaspoons chile sauce and chicken stock.
Heat wok, add oil and cook garlic.
Add shrimp and chicken and cook for a few minutes, then move to sides of wok.
Pour eggs in center of wok and stir until firm.
Add noodles to wok and pour in sauce.
Cook until noodles are tender.
Stir in bean sprouts and green onions.
Garnish with chopped peanuts.
Taste and adjust seasoning and add lime juice.
Serve with cilantro and lime wedges on the side.
