1 cup unrefined or refined sugar
1 cup brown sugar
1 cup corn syrup
1 cup of water
1 tsp. of extract (vanilla or maple)

Boil first 4 ingredients listed above. Remove from burner and add the extract. Stir, cool a bit and serve over pancakes or waffles. This is a wonderful way to stay warm when you are snowed in and out of syrup! My kids loved it when they were little.

We lived on a farm with a private lane. We always were snowed in one more day than everyone else until the plow came through to let us out. pancakes always seemed like the right choice as part of a hearty breakfast but we were often out of syrup! My Mom shared this very old, family recipe with me and it really helped me cope with cabin fever.
